
Sandwich Toast

Ingredients
3 Eggs (beaten) and mixed with thyme, chilli pepper and salt
Bread (sliced)- 18 slices for 9 servings
Lettuce (sliced)
Fresh scotch bonnet
Onion (diced)
Tomatoes (sliced)
Cucumber (sliced)
Cabbage (optional)
Blue Band Margarine (for cooking)
For garnishing
Cucumber
Tomato
Lettuce
Cabbage
Lemon

Method
Put a frying pan on low heat, add little margarine, add the onions and fresh scotch bonnet, add little salt and allow to cook for 5mins.
Rub a little amount of margarine around the toaster (upper layer and lower layer)
Dab bread slice into the egg mixture.
Put first layer in the toaster.
Add your lettuce, tomatoes, cucumber, cabbage and fried scotch bonnet mix
Dab second layer in egg mixture, then cover the first layer.
Close the Toaster and allow to cook till golden.
Remove sandwich Toast
On a skewer, put sliced cucumber, tomato, cabbage and lettuce
Splash a little amount of lemon on them.
Serve in plates.
