Sandwich Toast

Ingredients


3 Eggs (beaten) and mixed with thyme, chilli pepper and salt

Bread (sliced)- 18 slices for 9 servings

Lettuce (sliced)

Fresh scotch bonnet

Onion (diced)

Tomatoes (sliced)

Cucumber (sliced)

Cabbage (optional)

Blue Band Margarine (for cooking)


For garnishing

Cucumber

Tomato

Lettuce

Cabbage

Lemon





Method

  • Put a frying pan on low heat, add little margarine, add the onions and fresh scotch bonnet, add little salt and allow to cook for 5mins.

  • Rub a little amount of margarine around the toaster (upper layer and lower layer)

  • Dab bread slice into the egg mixture.

  • Put first layer in the toaster.

  • Add your lettuce, tomatoes, cucumber, cabbage and fried scotch bonnet mix

  • Dab second layer in egg mixture, then cover the first layer.

  • Close the Toaster and allow to cook till golden.

  • Remove sandwich Toast

  • On a skewer, put sliced cucumber, tomato, cabbage and lettuce

  • Splash a little amount of lemon on them.

  • Serve in plates.
